GREEK GOD CHICKEN

This dish is a delicious combination of juicy chicken breasts, tangy feta cheese, and bright herbs like oregano and basil. Ingredients: 

  • Chicken, cut into 6 pieces - 3 pounds
  • Salt - to taste
  • Lemons, juice - 3
  • Lemon, zest - 1
  • Garlic, minced - 2 cloves
  • Fresh oregano, chopped - 1 tablespoon
  • Black pepper, freshly ground - 1/8 teaspoon
  • Olive oil - 2 tablespoons
  • Fennel bulbs, trimmed, cored, and sliced - 2
  • Kalamata olives, pitted halves - 1/4 cup

Directions: 

  • Preheat the oven to 400 degrees F.
  • Pat the chicken dry and loosen the skin.
  • Season the chicken with salt and pepper.
  • In a small bowl, mix together lemon zest, lemon juice, garlic, and oregano.
  • Place half of this mixture under the skin of the chicken.
  • In the same bowl, mix together the remaining herbs and ingredients.
  • Transfer the mixture to a baking dish and place the chicken on top.
  • Bake the chicken in the oven for approximately 40 minutes, or until the meat is tender.
  • Remove from oven and serve warm.
  • Enjoy your delicious and hearty chicken dish for dinner.
