LEMON AND THYME CHICKEN

Ingredients: 

  • Chicken breasts, boneless and skinless - 2 pounds
  • Garlic cloves, minced - 2
  • Lemon zest - 1
  • Lemon juice - 1
  • Fresh thyme - 4 sprigs
  • Lemons, cut into wedges - 2
  • Sea salt - to taste
  • Freshly ground black pepper - to taste

Directions: 

  • Start by preheating the oven to 375°F.
  • Take a large bowl and place the chicken pieces inside.
  • Give the chicken a generous sprinkle of sea salt and freshly ground black pepper.
  • Mix in the minced garlic cloves, lemon zest, lemon juice, and thyme sprigs, making sure each piece of chicken is well coated.
  • Transfer the seasoned chicken to a baking dish that's been lightly greased with oil.
  • Place the dish in the oven and bake for 40-50 minutes, until the chicken is fully cooked.
  • Once the chicken is ready, take it out of the oven and serve it warm with a garnish of lemon wedges on the side.
