SPICE MAPLE CHICKEN

This dish combines juicy chicken breasts with the warm and cozy flavors of maple syrup and a blend of spices. Ingredients for the Grilled Chicken:

  • Whole chicken - 4 pounds
  • Salt, to taste
  • Garlic cloves, minced - 4
  • Green onions, chopped - 2
  • Ginger, minced - 2 teaspoons
  • Five-spice powder - 3 teaspoons
  • Melted butter - 4 tablespoons
  • Green onions, cut in half - 4-5
  • Grapefruit juice - 1 cup
  • Chicken stock - 1 cup

Ingredients for the Maple Glaze:

  • Coconut amino - 2 teaspoons
  • Sesame oil - 1 tablespoon
  • Maple syrup - 6 tablespoons
  • Lemon juice - 4 tablespoons
  • Melted butter - 3 tablespoons

Directions

  • Preheat your oven to 375°F.
  • Take a large bowl and mix together salt, green onions, stock, juice, ginger, five spices, and butter.
  • Whisk the ingredients together and apply the mixture under the chicken skin, in the cavity, and on top of the skin.
  • Fill the chicken cavity with the green onions and garlic cloves.
  • Place the chicken in a roasting pan and bake for 35 minutes.
  • In the meantime, mix all of the ingredients for the maple glaze in a bowl.
  • After 30 minutes of roasting, pour the broth and juice into the pan.
  • Baste the chicken with the maple glaze every 20 minutes and repeat the process a few times.
  • The total roasting time for the chicken should be 1 hour and 30 minutes.
  • Remove the chicken from the oven and let it rest for 10 minutes before slicing.
  • Serve the chicken along with the pan juices.
