Ingredients for the Grilled Chicken:
- Whole chicken - 4 pounds
 - Salt, to taste
 - Garlic cloves, minced - 4
 - Green onions, chopped - 2
 - Ginger, minced - 2 teaspoons
 - Five-spice powder - 3 teaspoons
 - Melted butter - 4 tablespoons
 - Green onions, cut in half - 4-5
 - Grapefruit juice - 1 cup
 - Chicken stock - 1 cup
 
Ingredients for the Maple Glaze:
- Coconut amino - 2 teaspoons
 - Sesame oil - 1 tablespoon
 - Maple syrup - 6 tablespoons
 - Lemon juice - 4 tablespoons
 - Melted butter - 3 tablespoons
 
Directions
- Preheat your oven to 375°F.
 - Take a large bowl and mix together salt, green onions, stock, juice, ginger, five spices, and butter.
 - Whisk the ingredients together and apply the mixture under the chicken skin, in the cavity, and on top of the skin.
 - Fill the chicken cavity with the green onions and garlic cloves.
 - Place the chicken in a roasting pan and bake for 35 minutes.

 - After 30 minutes of roasting, pour the broth and juice into the pan.
 - Baste the chicken with the maple glaze every 20 minutes and repeat the process a few times.
 - The total roasting time for the chicken should be 1 hour and 30 minutes.
